• 1 lb ground turkey
• 1 tbsp butter or olive oil
• 1/2 onion
• 3 small zucchini
• 6-8 whole mushrooms
• 1 can oregano flavored tomatoes
• 1 small can tomato sauce
• 1 tsp oregano
• 1 tsp Italian seasoning
• 2 tsp garlic powder
• 2 tbsp fresh basil
• Optional toppings: cheddar cheese, parmesan cheese, avocado, garlic bread
Heat butter or olive oil on the stove over medium low heat. I prefer the butter because the onions turn golden brown and delicious! Peel and cut the onion in half. Slice half the onion into strips. Add the onion and stir occasionally until the onions start turning golden brown.
While the onions are cooking, wash and slice the zucchini. I use a grader to make the size consistent, but you can just slice if you have not grader. once the onions start turning golden brown, add the zucchini and continue to cook on a medium low heat for about 15-20 minutes until the vegetables are tender and golden.
Preheat oven to 350.
While the onions and zucchini continue to cook, slice your mushrooms. Add the mushrooms to the pan and continue cooking for about 10 more minutes.
Push all the vegetables to one side of the pan. Add the ground turkey to the pan and start cooking. Once the turkey is half cooked, mix with the vegetables in the pan and continue cooking until the ground turkey is no longer pink.
Add the canned tomatoes, tomato sauce, oregano, Italian seasoning, garlic and basil to the pan and stir until mixed.
If your pan is able to go directly into the oven, place the pan in the preheated oven. (If not, poor the ingredients into an oven safe pan). Cook in the oven for 20 minutes. If you are adding the cheese topping, add the cheese to the top of the dish and broil on low for 5-8 minutes or until cheese is melted.
Remove from oven, garnish as preferred (I like mine with parmesan cheese on top) - ENJOY
