• 1/2 pound chicken breast, cut into pieces
• 1lb raw shrimp
• andouille sausage, 1/2 package cut into pieces
• 1/2 onion
• 2 stalks celery
• 1 red pepper, chopped
• 1 can diced tomatoes
• 2 cups chicken broth
• 1 tsp thyme
• 2 tsp cajun seasoning
• 1 tsp parsley
• 2 tsp oregano
• dash cayenne pepper, optional or to taste
Slow Cooker Method
Put all ingredients, except the shrimp, into a slow cooker. Cook on low for 5-7 hours or until all the meats and vegetables are fully cooked and tender. Add shrimp and cook for an additional 1/2 hour.
This could also be cooked in a pot on the stove!
Stove Top Method
Add one tbsp of oil to the pan and heat. Add the onion, pepper and celery and cook until tender.
Add the chicken and cook until there is no more pink. Add andouille sausage and saute for 2-3 minutes.
Add chicken broth, canned tomatoes, and all the seasoning and bring the pot to a boil. Turn the stove down to simmer and add the shrimp and cook for an additional 5-7 minutes until the shrimp is cooked.
Could be served with dinner rolls or rice!
