CRUST
• 2 cups self-rising flour
• 1 cup Greek yogurt
• Optional: You can choose to season with salt, pepper, garlic powder, oregano, or any other flavor you would like. I left mine plain and they were a big hit!
FILLING
• 1 jar pizza sauce
• Canadian bacon, diced
• Diced onion
• Diced tomato
• Cheddar Cheese (or mozzarella
• Optional fillings: Have some fun with the fillings! Anything goes in pizza! I have also made taco pockets!
These make a great premade dish for camping!
Preheat oven to 350 degrees.
Spray with cooking oil or place parchment paper on a large sheet pan.
Dice all ingredients for the pizza pockets. Set aside.
In a medium size bowl, mix the flour and Greek yogurt until just combined. A wooden spoon seems to work great for mixing.
Sprinkle flat service with self-rising flour. Transfer the dough to the service and begin kneading until well-mixed and smooth. You may need to sprinkle with more flour if the dough is too sticky. If it is too dry, add a small amount of the yogurt to make it smooth.
Evenly divide the dough into 6 balls. Using a rolling pin, roll out until it fits the press you are to make the pockets, such as a dough press or calzone press. Place the rolled dough on the press. Drizzle entire inside with pizza sauce. (Avoid the edges so the dough binds together when pressed.) Add the desired fillings on 1/2 of the dough. Press the pocket together to crimp shut. Place on sheet pan.
If you do not have a press available, simple roll the dough until it is approximately 1/8" thick round. Drizzle entire inside with pizza sauce. (Avoid the edges so the dough binds together when pressed.) Add the desired fillings on 1/2 of the dough. Fold the dough over and press together with a fork to crimp together.
Bake for 12-15 minutes or until pockets are golden brown. Can be served with extra pizza sauce for dipping if desired.
The pockets can be eaten immediately,, frozen for later time, or can be warmed up later in toaster oven, air fryer or over a campfire! Be creative and share your versions with us on our Blog!
