Tomato Basil Bruchetta
Ingredients
- Cooking Spray
- 1 Baguette (or french loaf) (I like to use the baguette from Panera Bread)
- 8 roma tomatoes, diced
- 1/2 cup diced red onion, diced
- 1/4 cup chopped fresh basil
- 2-3 cloves of garlic
- 1/4 cup shredded Parmasen cheese
- 1 Tbsp balsamic vinegar
- 2 tsp olive oil
- Salt and pepper to taste
Directions
- Preheat oven to 420º.
- Cut the baguette into diagonal slices about 1/2" thick
- Spray lightly with cooking spray.
- Place on sheet and bake for 8-10 minutes until golden brown (keep a close eye on the bread as it can overcook very easily.
Meanwhile...
- Dice the tomatoes and red onion, Add to large bowl.
- Chop the basil and add to the bowl.
- Sprinkle with salt and pepper.
- Add the 2 tsp olive oil and 1 tbsp balsamic vinegar and mix well. Put in refrigerator for at least 30 minutes.
- When the bread is ready, take out the tomato mixture and add the 1/4 parmesan cheese. Stir.
- Arrange the bread on a serving platter and top with the mixture. Eat! Enjoy!
