Chicken and Potato Pie
Ingredients
- 1 tbsp olive oil
- 1 medium onion, chopped
- 5-6 potatoes, diced
- 1-2 chicken breast, diced
- 1 package mixed vegetables
- 4 cloves garlic or 2 tsp garlic powder
- 1 tsp Italian Seasoning
- 1 tsp Thyme
- 2 cans cream of mushroom soup
- 1-1 1/2 cups chicken broth
- 1 cup cheddar cheese
- Cooking Spray, water
Directions for Toppings
- Preheat oven to 420º.
- Spray a pie pan or 8x8 pan with cooking spray.
- Chop onion. Heat oil in large pan, on medium heat. Start cooking the onion until turning lucent.
- Meanwhile, dice the potatoes. Add to onions. I added 1/4 cup water to pan and put lid on to help cook the potatoes. Cook for apprx. 10 minutes or until the potatoes are starting to tender.
- Add the chicken.
- Once chicken is almost cooked, add package of mixed vegetables. I used carrots, peas, beans and carrot mixture.
- Put the lid back on and let simmer until vegetables are thawed. Add garlic and seasonings.
- Meanwhile in a large bowl, mix the cream of mushroom with the chicken broth until the sauce is creamy, not runny.
- Add the chicken mixture to the sauce. Stir until everything is covered in the sauce.
- Add the mixture to your sprayed pan.
- Top with cheddar cheese.
- Bake for 15 minutes or until the cheese is golden brown. Enjoy!
