Black Bean and Corn Salad
Ingredients
- 1 can black beans, drained and rinsed
- 1 can corn, drained and rinsed
- 1 can tomatoes, drained and rinsed
- 1/4 red onion, diced
- 1 tbsp. lime juice
- 3-4 cloves of garlic
- 1 tsp. ground cumin
- 1 tsp onion powder
- 1 tsp garlic powder
Directions
- Combine black beans, corn and tomatoes in a bowl.
- Whisk together lime juice, cumin, garlic, onion powder and garlic powder.
- Pour over vegetables. Mix to combine.
Options
- Fresh tomato can replace canned tomato.
- Yellow corn or white corn can be used.
